When evaluating the flavor of the Hojicha Roasted Tea, we consider both the aroma and how the tea interacts with the palate. We look for dryness, acidity, minerality, and sweetness. We also focus on the texture of the tea, or mouthfeel. Since this is a roasted tea, we pay special attention to the roast level, as this characteristic greatly influences the tea’s overall profile.

The leaves of the Hojicha Roasted Tea are composed of various leaf shapes and some stems. They carry a medium to dark brown color, indicating the roasting process, while the stems may be slightly lighter.

Some of our tea packages bear the JAS (Japanese Agricultural Standard) certification, overseen by the Japanese government. Larger farms must undertake soil testing and sampling to earn this certification.

For smaller farms without the immediate resources for certification, we accept their teas under a “pesticide-free” label. This allows us to support exceptional tea producers while maintaining our quality and sustainability commitments.

Come preparare il tè

For the Hojicha Roasted Tea, we recommend using a higher temperature, around 95°C, and adjusting the brew time between 30 seconds and 1 minute according to your preference. Feel free to experiment within this range to find the strength that best suits your taste.

  • Passo 1

    Heat water to a temperature of 95°C (203°F).

    Passo 2

    Add about 5 grams of Hojicha Roasted Tea to your teapot (roughly 150ml of water) or adjust proportionally if using a larger teapot.

  • Passaggio 3

    Let the hojicha brew for 30 seconds to 1 minute, depending on how strong you like it. The roasting will bring out warm, sweet, and slightly smoky flavors.

    Pour out the brewed hojicha. Your teapot’s filter (or strainer) will keep the leaves and stems from entering your cup. Enjoy your delicious cup of Hojicha Roasted Tea!

    Don’t discard your leaves after the first infusion. You can brew them again for a shorter period, around 20 seconds, to extract more of the tea’s pleasant roasted and sweet character.

We suggest using a kyusu teapot to enjoy the best possible hojicha roasted tea experience. A kyusu provides ample space for the leaves and stems to expand, fully releasing their roasted, smoky flavors into the water. The built-in sifter ensures a smooth, sediment-free pour each time.

If a kyusu is not available, a simple tea strainer can work as well. While it may not deliver the same depth of flavor due to reduced space for the leaves, it will still keep unwanted leaf material

The Hojicha Roasted Tea comes from Gokase City in Miyazaki Prefecture, cultivated by the dedicated tea farmer Miyazaki Akira. His tea fields, located at an elevation of 550m–650m, are known for their cool, mountainous climate. This environment, coupled with his roasting technique, creates the nuanced, medium-roast flavor of the Hojicha Roasted Tea.

The Hojicha is made with a combination of Yabukita, Zairai and Kanayamidori

  • Yabukita

    Yabukita is by far the most widely grown tea cultivar in Japan, accounting for over 70% of the country's tea production. Celebrated for its balanced profile, Yabukita offers a harmonious combination of fresh green aroma, vibrant umami, mild sweetness, and just the right touch of astringency.

  • Zairai

    Zairai is not a specific cultivar but a term for tea plants grown from seed, rather than cloned cuttings. As a result, Zairai fields are genetically diverse, often featuring a mix of characteristics that reflect traditional, regional tea-growing practices. Teas made from Zairai tend to have a more wild, earthy flavor with astringent undertones and are deeply connected to Japan’s historical tea-making heritage.

  • Kanayamidori

    Kanayamidori is a unique cultivar developed in Shizuoka and known for its rich, slightly nutty flavor and bright green color when prepared. While it’s less common than other cultivars, Kanayamidori is appreciated for its refreshing umami and balanced bitterness, making it a favorite for high-quality sencha and sometimes hojicha.
