The Nadeshiko Rose Japanese Fermented Tea is made in Uji Japan using the same method of koji fermentation used to make soy sauce, sake and miso. The tea is also known as the "rosé of tea" because of its pink color and the slightly acidic, strawberry tasting notes.

When assessing the flavor of the Nadeshiko Rose Japanese Fermented Tea, we take into account both the aroma and how it interacts with the palate. We pay attention to the presence of dryness, acidity, minerality, umami or sweetness in the tea, and evaluate its texture, also known as mouthfeel. For Japanese fermented tea, we focus on the earthiness taste profile, as it is a typical feature in most Japanese fermented teas, in addition to other factors.

Some of our packages feature the JAS logo, which stands for Japanese Agriculture Standards. This certification ensures that our teas are cultivated without the use of pesticides or chemicals and is regulated by the Japanese government.

We are committed to ensuring that our teas are produced using organic methods, and we require our larger partner farms to obtain JAS certification through soil sampling and testing.

We also like to work with smaller tea farms, who may not have the resources to conduct official soil testing. As a solution, we accept their teas under the "pesticide-free" labeling. This allows us to help these smaller farmers get discovered while still adhering to our strict quality standards.

To get the best out of your Japanese fermented tea, it's advised to follow these instructions. If you brew the tea at the wrong temperature or for the wrong time, you may end up with either a bitter or watered down flavor.

    Passo 1

    Before you preparing the Japanese fermented tea, make sure you heat up the water to a temperature of 60 degrees Celsius or 140 degrees Fahrenheit. This is the best temperature for the Nadeshiko Japanese fermented tea.

    Add 5 grams of Japanese fermented tea to your kyusu teapot or tea strainer

    Pour in 150ml of water and allow the tea leaves to brew undisturbed for 1 minute.

    After the tea leaves are done brewing, you can pour out your tea and if you’re using a kyusu teapot it will automatically sift out the leaves so they don’t brew for too long inside the teapot and they don’t end up in your cup. Enjoy your Japanese fermented tea!

    Seconda infusione

    To extract more cups of tea from the leaves, you can simply pour the same temperature water back into the teapot and let the tea brew for 20 seconds for each additional infusion. As each infusion alters the taste slightly, you can enjoy 3-4 completely different cups of tea from the same leaves!

When it comes to preparing Japanese fermented tea, the most appropriate tool to use is the Kyusu teapot. This tool gives the leaves the space they need to expand and release their flavor into the water, and it also has a built-in strainer that separates the tea leaves out as you pour.

Alternative without teaware

In case you don't have a teapot at home, a tea strainer can be a great substitute for preparing Japanese fermented tea. It’s important to keep in mind that the tea leaves may not have as much space to expand in the strainer as they would in a teapot, resulting in a weaker flavor. While a teapot is the best option, not having one is no excuse to miss out on this delicious tea!

The Nadeshiko Rose Japanese fermented tea comes to us from the talented farmers at Chanoka in Uji. When we visited Mr. Takada, he introduced us to so many different types of rare teas and this is one of them. 

Mr. Takada and his family have been in the tea industry since 1907 when they opened their tea plantation. He is able to lean on multiple generations of tea knowledge to produce excellent quality green tea, oolong tea, black tea and Japanese fermented tea.

This Japanese fermented tea is produced in Uji, Japan. Uji is known for consistently producing some of the best quality teas in Japan. The soil is great quality, the air is clean and misty, the terrain is hilly and the winters are relatively mild with no frost. This climate has produced excellent teas for hundreds of years.

The Nadeshiko rose Japanese fermented tea is made using the Benifuuki cultivar, which is normally reserved for Japanese black teas or “wakocha”

  • Benifuuki

    The benifuuki cultivar has a higher concentration of catechins, so while it produces an astringent green tea, the variety works exceptionally well in black teas and Japanese fermented teas. The teas produced with Benifuuki yield a smooth taste and excellent aroma, as the fermentation and oxidation process really mellows out the catechins.
