To evaluate the Wazuka Matcha Seisui, we evaluated the texture of the matcha as well as the flavor. Does it produce a dryness, sweetness, minerality or acidity? We’ll also evaluate how thick or rich the consistency of the matcha is, otherwise known as mouthfeel. Finally, for matcha specifically, we like to take a look at the vegetal flavor of the tea, as this is a profile consistent across all types of matcha.

The JAS logo you see on our Wazuka Matcha Seisui, as well as many of our other teas, represents Japanese Agriculture Standards. This mark assures consumers that the products were cultivated without the use of pesticides or chemicals.

At Nio, we give priority to tea plantations that are entirely free of pesticides or chemicals during our selection process. When collaborating with larger tea farmers, we require they provide the JAS label, which they can obtain by undergoing soil sampling and testing.

When partnering with smaller tea farmers who may not have the resources for soil testing, we also accept the "pesticide-free" designation. This is in order to provide opportunities to smaller farmers, while still maintaining our commitment to quality and sustainability.

To prepare the Wazuka Matcha Seisui, follow these basic steps for optimal results. While you can simplify this process if desired, we recommend following these steps to achieve the best possible outcome for your matcha.

    Passo 1

    Take 2 grams of matcha powder and sift it into your matcha bowl to remove clumps caused by humidity.

    Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit.

    Add roughly 1 tablespoon of water to the bowl and stir the matcha powder into a paste to ensure that it's evenly distributed. Pour in 100ml of water

    Using your whisk, gently scrape the sides and bottom of the bowl to combine the matcha into the water.

In order to prepare a delicious cup of matcha tea, you'll need the following accessories:

  1. A matcha bowl, also known as a chawan, which is a shallow and wide bowl made of either ceramic or porcelain. It is specifically designed to help whisk the matcha powder evenly and create a smooth and frothy texture.
  2. A matcha whisk, also called a chasen, which is made of bamboo and has numerous thin tines. This tool is used to mix and froth the matcha powder with hot water, ensuring a consistent and flavorful cup of tea.
  3. A matcha scoop, or chashaku, which is a bamboo utensil that helps measure out the right amount of matcha powder and transfer it to the matcha bowl. This ensures that the tea is well-balanced and not too bitter.
  4. A sifter, which is recommended for both traditional Japanese tea ceremonies and everyday use. Sifting the matcha powder helps remove any clumps and ensures that the tea has a smooth and silky texture.

Mr. Nakai's father is a key figure in the development of the JAS logo, which is now included on every label of organic certified tea in Japan. This is a testament to the Nakai family's longstanding commitment to producing Japanese green teas without the use of pesticides or chemicals.

The Wazuka Matcha Seisui comes from a region outside of Kyoto that has a rich history of tea cultivation. This area is known as the birthplace of Japanese green tea, with the first tea plants being planted nearby in 1192. Even today, it remains one of the most renowned areas for growing Japanese green tea.

Matcha is a particular specialty of the region. After tasting hundreds of matcha teas from across Japan, it's clear that Kyoto and Uji are the foremost regions for this prized tea. Matcha cultivation has flourished in this area for over 400 years, and shows no signs of slowing down!
