Da Nio Teas , ogni matcha è classificato come Latte, Entry, Premium o Superior. Il grado Premium è il nostro livello cerimoniale più raffinato: foglie del primo raccolto ( ichibancha ), tenute all'ombra per un lungo periodo prima della raccolta, con la selezione delle sole foglie giovani più pregiate. Offre un umami molto elevato, un'amarezza molto bassa e un'astringenza minima, ed è abbastanza vellutato per il koicha, la preparazione densa, così come per l'usucha.
Il Matcha Chanoka Okumidori Uji si colloca nella categoria Premium per le sue caratteristiche organolettiche. La cultivar Okumidori gli conferisce un corpo morbido e pieno, con un delicato sapore di verdure al vapore che evolve in una vivace nota erbacea, per poi concludersi con una raffinata secchezza e un leggero sentore di amaro di cioccolato fondente.

Il matcha Uji è prodotto con la cultivar Okumidori e, in base al feedback dei clienti, è costantemente il nostro tipo di matcha più popolare da Nio Teas .
Okumidori è una varietà di tè rinomata per la sua capacità di produrre infusi morbidi e corposi. Viene spesso miscelato con altri tè per attenuarne l'amarezza, ma può essere gustato anche da solo. Nonostante la sua coltivazione sia più complessa, Okumidori è molto apprezzato per il suo contributo a tè come il matcha Uji , che presenta un retrogusto completamente privo di amarezza.
Preparazione e presentazione30 g = 15 porzioni · 60 g = 30 porzioni
Montato a neve finissima come l'usucha, 2 g di matcha sono sufficienti per una ciotola.
Immergere la frusta di bambù in acqua per 2-3 minuti prima del primo utilizzo, oppure per 30-60 secondi per l'uso quotidiano.
Setacciate 2 g (1 cucchiaino) di matcha , circa 2 misurini chashaku , nella vostra ciotola.
Riscaldare l'acqua a 70 °C / 160 °F.
Aggiungere 10 ml (1 cucchiaio) di acqua e mescolare fino a ottenere una pasta liscia e senza grumi.
Aggiungi la restante acqua: 80 ml / ⅓ di tazza in totale.
Sbattere con movimenti rapidi a W per 15-30 secondi.
Gustatevi il vostro matcha , poi sciacquate la frusta, lasciatela asciugare all'aria e riponetela sul suo supporto.
Come un latte macchiato:
Setacciate 2 g (1 cucchiaino) di matcha , circa 2 misurini chashaku , nella vostra ciotola.
Riscaldare l'acqua a 70 °C / 160 °F.
Aggiungere 10 ml (1 cucchiaio) di acqua e mescolare fino a ottenere una pasta liscia e senza grumi.
Aggiungete altri 30 ml di acqua – per un totale di 40 ml – e sbattete con una frusta con movimenti rapidi W per 15-30 secondi.
Versa il matcha sul latte caldo o freddo che preferisci. Aggiungi del ghiaccio per un latte al matcha freddo.

Questo tè proviene da Takada Masahiro, un agricoltore di Uji che gestisce l'azienda di famiglia a Chanoka . Discover the art of preparing the perfect bowl of matcha, from choosing the right tools to mastering the traditional whisking technique.
Prepare
Soak the bamboo whisk. First use: 2–3 minutes · Daily use: 30–60 seconds. Sift 2 g (1 tsp) of matcha, or 2 chashaku scoops, into the bowl.
Make the Paste
Heat water to 70°C / 160°F. Add 10 ml (1 tbsp) of water and combine into a smooth matcha paste with no clumps.
Whisk
Add the rest of the water, 80 ml / ⅓ cup in total. Whisk in quick W motions for 15–30 seconds.
Enjoy & Care
Enjoy your matcha. Rinse, air-dry and store the whisk on its holder.

Love Nio Teas, learnt so much about tea from them and have been trying what my wallet can afford me! This time it was Uji Matcha Chanoka Okumidori. Perfectly fine Matcha, good colour, easily whisked with a good foam. Not a thick drink and quite dry and vegetal but easy to have with or without milk.
This is far grander a tea than most “on the market” matcha teas one can acquire at the local shops. I typically will drink a cooking grade matcha, but never again! I love that this tea is affordable and has an excellent balance of flavor (mildly pleasant bitterness and grassy notes) and allows for one to have a less jittery caffeine boost.
This matcha from the renowned Uji region pleasantly surprised me.
Despite its ceremonial grade, I wanted to venture into a daring exploration and decided to marry it with fresh oat milk.
The result?
A taste explosion that really exceeded all expectations!
The encounter between the vibrant green of matcha, from the okumidori cultivar, and the creamy smoothness of the vegetable milk generated a unique taste experience.
Every sip takes me back to my childhood days of eating Corn Flakes in the morning.
And what about the chawan?
After stirring this matcha, it exudes a fresh, enveloping fragrance, a seductive combination of herbaceous and milky notes that literally leaves you gasping, wanting to savour this timeless delight again and again.

Ok so I really wanted to love this matcha because I bought so much of it at once. But it was very light/flowery and although the color is beautiful it wasn’t earthy enough for me and it didn’t have enough caffeine in it for my liking. Over all it is high quality so I gave it 4 stars
Chanoka Okumidori has a more intense bitterness to it. The grassyness is balanced with a nice yet slight sweetness. The umami note is on the fainter side.
With it's ticker feeling/texture in the mouth and medium dryness Chanoka Okumidori gives one an overall round Matcha experience.
Especially good for beginners, who still do not know what to look for in a Matcha.
Not so much for experienced Matcha drinkers, as Nio can shine with more impressive ones.
