Scopri tutti i segreti di Saemidori Matcha Henta

The Saemidori Matcha Henta is a smooth and sweet matcha tea produced by Mr. Henta in the Kirishima region and it’s well liked for its light sweet taste

Scopri i risultati del metodo di degustazione del tè in 4 fasi di Nio Teas

To evaluate the Saemidori Matcha Henta, we evaluated the texture of the matcha as well as the flavor. Does it produce a dryness, sweetness, minerality or acidity? We’ll also evaluate how thick or rich the consistency of the matcha is, otherwise known as mouthfeel. Finally, for matcha specifically, we like to take a look at the vegetal flavor of the tea, as this is a profile consistent across all types of matcha.

Passaggio 1: osservare l'aspetto

The color of the saemidori matcha powder is on the lighter side, but it still maintains a vibrant green

Passaggio 2: valutazione dell'aroma

The aroma as the powder mixes with the water is sweet and slightly spicy, without much grassiness

Passaggio 3: degustazione del tè

The saemidori matcha henta starts off with these fresher, brighter and sweeter flavors followed by a crisp edamame tasting note and a smooth, milky finish with flavors of oatmilk. The tea has a medium thick consistency and is tame in terms of astringency and acidity.

Passaggio 4 - Valutazione della sensazione al palato

The structure of the saemidori matcha henta is very tame, with a creamy flavor, a light sweetness and not too much in the way of umami, acidity or astringency. It doesn’t challenge the palate too much, but rather soothes it.

100% coltivato biologicamente e di provenienza etica

Nio Tea is exclusively working with tea farmers who cultivate their plants using organic and pesticide-free methods. We believe that these methods not only improve the taste of the tea, but also promotes the overall health and sustainability of the tea fields.

Our experience has shown that by avoiding the use of chemicals and pesticides, tea farms can not only support the growth of tea plants, but they can also foster a thriving ecosystem for a diverse range of wildlife.

Nio Teas Unique Organically grown sourcing process

  • Careful taste testing of each individual tea
  • Communication with the farmers about the production methods and how they make sure they ensure no pesticides are being used on the fields
  • In person farm visits to judge the quality of the tea field and the production facility
  • Making sure that the biodiversity around the tea fields is lively
JAS Japanese Agriculture Standards logo

Certificato JAS

The abbreviation JAS denotes Japanese Agriculture Standards, which guarantee that products have been grown without the use of pesticides or chemicals.

Our tea selection process prioritizes tea fields that are completely free from pesticides or chemicals. While collaborating with larger tea farmers, we require them to provide us with the JAS label, which they can afford due to soil sampling and testing.

However, we also partner with smaller tea farmers who have not yet obtained certification but produce outstanding tea. In such cases, we accept the "pesticide-free" label and strive to provide opportunities for small farmers without making the screening process too difficult.

Come preparare il tè

When preparing the saemidori matcha henta, you just need to follow a few basic steps. You can simplify this process if you prefer, but if you really want to get the best results from your bowl of matcha, we recommend using these steps.

  • icon of a strainer with quantity of matcha grams to add to prepare ceremonial matcha

    Passo 1

Sift 2 grams of matcha powder into your matcha bowl. This will remove the clumps that form in the matcha powder as it is exposed to the humidity in the air.

    Passo 2

Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit.

  • black icon of a black teapot pouring water in a chawan bowl

    Passaggio 3

Pour in just enough water to mix the matcha powder into a paste (usually about 1 tablespoon). This process also helps the matcha mix evenly into the water. Pour in 100ml of water at a temperature.

    Passaggio 4

Start to combine the matcha into the water by gently scraping off the sides and the bottom of the bowl

    Passaggio 5

Begin to whisk the matcha up in rapid zigzag motions using your wrist until a light green foam begins to appear on top

Servizio da tè necessario

When preparing matcha, you will need certain accessories, including a matcha bowl (chawan), which is a shallow ceramic or porcelain bowl specifically designed for whisking matcha. You will also need a matcha whisk (chasen), which is made of bamboo with numerous thin tines that mix and froth the matcha powder with hot water. A matcha scoop (chashaku) is also necessary to measure the correct amount of matcha powder and transfer it to the matcha bowl. Additionally, using a sifter is recommended to ensure that the matcha powder is smooth and consistent, making it easier to dissolve in water and creating a frothy texture when whisked. Sifting is an important step in the traditional Japanese tea ceremony and is also recommended for everyday use to ensure a high-quality cup of matcha.

As the name would suggest, the saemidori matcha henta is made from the Saemidori cultivar. This is a rare cultivar in Japan but it works great in premium teas like gyokuro and matcha.

  • Saemidori

Although it has a lower yield than Yabukita and is quite sensitive to the cold, Saemidori is still cultivated due to the delicate and sweet flavor it produces. Mr. Henta uses this cultivar in the saemidori matcha henta to produce a delcious sweet and smooth flavor.
