Hojicha is green tea roasted after processing, traditionally in a porcelain pot or a rotating drum, at temperatures high enough to turn the leaf from green to reddish brown. The roast drives off much of the tea's caffeine and catechins along with its grassiness, leaving a cup that is nutty, toasty and almost entirely free of bitterness or astringency. It was a Kyoto invention of the 1920s, a way to make use of leaf and stem that would otherwise have been sold cheaply, and it became the tea Japanese families drink in the evening and serve to children. Brew it hot and briefly — unlike most green teas it will not punish you for near-boiling water. The liquor is amber rather than green, and the aroma fills a room.

Whisked into milk as a latte, 2 g of hojicha powder makes one cup.
Soak the bamboo whisk — 2–3 minutes before first use, 30–60 seconds for daily use.
Sift 2 g (1 tsp) of hojicha powder, about 2 chashaku scoops, into your bowl.
Heat water to 80°C / 175°F — hojicha is already roasted, so it takes hotter water than matcha.
Add 10 ml (1 tbsp) of water and work it into a smooth paste with no clumps.
Add another 30 ml of water, 40 ml in total, and whisk in quick W motions for 15–30 seconds.
Pour over 150–200 ml of hot or cold milk. Add ice for an iced hojicha latte.
Rinse the whisk, let it air-dry and store it on its holder.
For a straight cup without milk, use the same 2 g and top up to 80 ml of water.

The Oishi family farm is in Yame, Fukuoka Prefecture, on Japan’s southern island of Kyushu, and the family has been producing tea since 1940, combining time-honoured technique with modern organic stewardship. Mr. Oishi shades his fields for several weeks before harvest, hand-selects the finest leaves and stone-grinds them slowly to preserve their aroma and smoothness.

A hojicha latte is a wonderful replacement for a coffee latte or hot cocoa - it is chocolatey, nutty, creamy. Biscotti tastes amazing dunked in it, and the lower caffeine content allows it to be drunk any time in the day. I am pleased with the delivery and quality of the tea.
The Hojicha tea is especially suitable for the colder months with its toasty comforting flavor profile, including nuances of nuts, barley, chicory, and coffee.

Absolutely delicious! Great taste. Made panna cotta hojicha and it was amazing. Great value. Will purchase again! It is gritty. I'm no expert on hojicha. I don't mind the gritty as the flavour it delicious.
The taste itself is really good - nutty and sweet, which I like. But the texture is so gritty, even after sifting. I don't know if this is a common issue with hojicha powder but I find this power more coarse and not as finely ground as matcha from this store. Perhaps I can try baking with it.
